Born and raised in Athens, Greece, Marinos Kosmas brings both a passion for food and a creative flair to his role as Execuitve Pastry Chef. Afer graduating high school, Marinos enrolled in Culinary & Confectionary Studies at School of Tourism Education of Anavissos. The experience helped hone his technical skills and expand his culinary knowledge. Having worked in Nobu Matsuhisa’s restaurants around the world, Marinos has collaborated with some of the world’s most respected chefs. Prior to joining Bulldozer Group, Kosmas worked with Claudio Cardoso in Sushisamba, London, and later led the successful 2015 launch of Novikov in Dubai. Given his national profile in his homeland, he was also a celebrity guest on the Greek edition of the reality TV series, MasterChef.
A respected author, Kosmas has published articles for ‘50 Best Greek Chefs Magazine,’ ‘Z + G Pastry and Gelateria Magazine,’ and ‘Senses Cookbook.’ Sharing his passion for cooking, Kosmas often hosts educational seminars to inspire international chefs, from chocolatiers and confectioners to pâtissiers. A confident leader and creative artist, Kosmas oversees the KEIA team to deliver memorable culinary experiences.

Years working in restaurants around the globe, Greek-born Chef Yiannis Babalis has amassed technical skills and expertise in the culinary arts. With his energetic flair and unwavering dedication, he brings his culinary innovation and enthusiasm to KEIA. Growing up in Greece, Yiannis was surrounded by traditional family dishes and Mediterranean flavours. After graduating from Chef d’Oeuvre, a cooking school in Greece, he embarked on his journey to becoming a professional chef. Babalis travelled extensively, honing his skills in respected restaurants in Greece, Austria, the United Kingdom, and France. He further refined his culinary skills at the much-lauded Scorpios in Mykonos, working alongside celebrated Chef Alexis Zopas, KEIA’s culinary consultant.
Mastering the complexities of Greek cuisine, Babalis is dedicated to showcasing traditional dishes infused with authentic Mediterranean flavours. He looks forward to presenting much-loved dishes to guests that have been passed down through generations and elevated with cutting-edge cooking techniques and ingenious presentation.
